Small 8vo. (8), 480, 28 pp. With head- and tail-pieces, decorative initials, and full-page plates, often with multiple figures. Full old calf, 5 raised bands on the spine with elaborate gilt stamp within 5 compartments and gilt lettering in 1 compartment. Lightly rubbed, repair to upper right corner of spine, light soiling and staining within, small worm hole on rear cover and lower spine. Some pages are torn and repaired (affecting the text), p. 317/318 creased, and marginal small worm hole at the latter part of the text. [Vicaire 339]

テーブル・セッティングや肉・魚の切り方、カービングのデザインを描いた木版挿絵が多数収録されています。初版は1662年に出版され、本第4版の後も版を重ねました。様々な王侯貴族に仕えた宮廷料理人のマシャロの著作ともいわれます。ソムリエ、コックなど、担当によって章が分かれており、コックやパティシエなど料理人の章には多くのレシピが掲載されています。
破れを修復した跡があり、本文にかかっている箇所があります。
